
Christmas Rainbow Cake
I must say it’s a thrill to be invited by Divina from Sense & Serendipity to be her guest blogger for Christmas. It’s an honour to be invited to write a post for such a special occasion. I was thrilled at the thought of writing a Christmas post. Christmas means the world to me. I want to share my Christmas LOVE, JOY and PEACE with everyone who reads this post. My Christmas prayer for you is that you will be richly blessed in all ways this Christmas and in the days to come.

Sharing my Christmas LOVE, JOY and PEACE with everyone
Divina is a very nice friend from the Philippines and she shares a lot about healthy food and healthy eating on her blog. When I asked Divina whether she wanted a home cooked meal or a dessert, she jumped at dessert! Yes, we may both be talking and sharing about healthy food and healthy eating but we often give ourselves some breaks for wonderful desserts which give our lives a special lift.
Then it was decision time. It took me quite sometime to decide what dessert to make. Finally I settled for this special cake which I called Christmas Rainbow Cake.
The very reason why I call it Christmas Rainbow Cake is because RAINBOW to me always speaks of God’s promises…. that God keeps His promises…..His promises of love, blessings, hope, joy, healing, peace etc.

This cake is not baked but steamed, layer by layer. Both Divina and myself love coconut, so I used coconut cream to give it a lovely flavour. This type of steamed layered cake is one of my favourite cakes, both in taste and texture. It is a 6-layered cake where I only used red and green to create a 3 coloured effect. The other colour is a plain colour from the batter. I used natural red colouring (store bought) and green pandan essence. Here is my recipe to share.
Ingredients A
450g butter
125g sugar
10 eggs
Beat the butter and sugar in a mixing bowl until light. Add in eggs one at a time, beating well after each addition.
Ingredients B
1 can condensed milk (400g)
300g sweet potato jam
Add the condensed milk and jam to the butter mixture above. Mix well.
Ingredients C
200g flour
1packet coconut cream powder
red colouring
pandan essence (or use green colouring)

Plain Batter

Green Batter

Pink Batter
Fold in the flour and coconut cream to the mixture above. Mix well. Divide into 3 equal portions. In one portion add a few drops of pandan essence. In another portion, add a few drops of the red colouring and in another portion, just leave it plain.
Add enough water to the steamer and let it boil first. Oil a tin, big enough to hold the 3 portions. Put it into the steamer to heat up first. Pour in half of the plain batter. Let it steam for about 10 minutes. Pour in half the green portion and likewise let it steam for 10 mintes. Similarly, pour in half the red portion and steam for 10 minutes too. Do the same to the rest of the batter in the same order.

Moist and delicious cake
Remove from the steamer (be careful as it is very hot) and let it cool completely before cutting. Enjoy this special and delicious Christmas Rainbow Cake and know that things will get better because God keeps His promises.

This post is a reminder for me (and for all of us) that God is still faithful in keeping His promises even if I don’t see any evidence of positive change. He is the same yesterday, today and tomorrow. What a nice timing to be posting this. And regardless of how I feel, I still need to believe God’s word more than what people say about me. It’s not easy most especially when people don’t understand what you’re going through or what God spoke to your heart. But in the end, God always has a purpose for everything even if you don’t understand what is happening.
